Banana Bread



250 gm sugar 125 gm butter 4 pc eggs 375 gm flour 500 ml milk 20 gm baking soda 1/2 tsp baking powder 2 pc bananas (purée) sq vanilla essence
Cream together the sugar and butter and then add the beaten eggs gradually, and put to one side
Blend the bananas with the milk and vanilla essence (in a food processor)
Sift together the flour, baking soda and baking powder
Mix all the ingredients together and pour into a well greased cake/loaf tin
Bake at 180°C for 40 - 60 minutes or until a small knife comes out clean when inserted into the cakes centre
Remove from the oven and allow to cool in the tin for 5 - 10 minutes
Turn out gently onto a cooling rack to thoroughly cool

Chef's Note:

If your mixture appears to separate when adding the beaten egg, just add a little of the sifted flour from your recipe and continue to mix, this will hold your mixture together .
